Fluffy pancakes with coconut and oat flakes

Is there anything better for breakfast than delicious and fluffy pancakes?  Sweet, healthy and fulfilling.  Such pancakes can be prepared at home, without a lot of effort! All you need to do is mix all the ingredients together in a blender, and the preparation will not take more than 20 minutes of your time. For a sweet surprise and crunchiness, top the pancakes with agave syrup and sprinkle them with Paleo Snack.

Method

  1. Mix the dry ingredients together – oat flakes, baking powder, cinnamon, ground coconut chips and Himalayan salt. Add the wet ingredients – milk, agave syrup, mashed banana, a teaspoon of coconut oil, vanilla extract and coconut cream. Mix everything well to get a smooth lump-free mixture.
  2. Place pan over medium heat, add coconut oil and then a large tablespoon of the mass. When bubbles start to appear on the surface, turn the pancake over and bake for another 3 minutes. 
  3. When the pancakes are ready, serve them with the desired topping – coconut cream, paleo snack and agave syrup.
